If you would like other serving options, you could serve with rice, tortilla chips, add it to a burrito or centre it in a quesadilla. You could even use it as a topping on a jacket (baked) potato. You could also top the mixture with grated cheese and/or sour cream.

QUICK AND EASY SWEET CHILLI CHICKEN SALAD

To make when: you need a quick and easy lunch – such as when you are in between meetings, if you work from home; you need a way to add extra vegetables to your diet; if you need to keep doing other tasks – this is quite a ‘hands-off’ recipe.

Let’s be honest about this; I really do not like vegetables – and yes, ostensibly I qualify as an ‘adult’ in the grand scheme of things. The fact of the matter is we all need at least some goodness in our diet; it just took me a while to find forms of vegetables that I am happy with, in order to get around related sensory issues. Salads are quite easy to prepare – and this recipe also uses minimal energy, which is a bonus. The chicken may not be accessible to everyone – but you can swap for an alternative of your own preference, such as if you are vegan. Please note that this recipe does not use quantities, as it is designed to be adaptable in terms of size – it can easily feed more people. The way I have written it would be more than enough for one person, however.
